PRIME RIB DONENESS GUIDE
Rare = bright red center and slightly pink toward exterior
120 to 125 degrees
Medium Rare = extremely pink center that is brownish toward the exterior.
130 to 135 degrees
Medium = a light pink center and brown outer portions.
140 to 145 degrees
Medium Well = light brown on the inside and darker brown on the outsides.
150 to 155 degrees
Well done = dark brown throughout.
160 degrees
